Spring Citrus and Berry Compote

Whether you live in chilly New England or sunny California, the first sign of spring is a welcomed sight. Buds on the trees, birds chirping… and perhaps a sweet treat give promise to long days and warm nights ahead. This bright and fruity berry compote is the perfect pairing for our Chocolate, Vanilla, or Red Velvet Cake. Spread it in the middle of the cake as a filling or top your slices as a juicy sauce (and maybe garnish with a leaf or two of mint).

This berry compote is extremely versatile. It's also absolutely delicious and incredibly easy to make. With just a few simple ingredients and a few minutes of your time, you can create a burst of fruity goodness that will have your taste buds dancing with delight. It's the perfect little addition to sweet treats. Put it on top of a custard or cheesecake to add a touch of fruity sweetness. And you better believe it can take ordinary waffles and pancakes and turn them into extraordinary breakfast treats. Don't be afraid to try it in savory applications. A touch of berry compote can really liven up any number of meats. But my all-time favorite use has to be on cakes. The moist lightness of the cake melds perfectly with the sweet berries.

Spring Citrus and Berry Compote


You Will Need: 

  • ½ cup strawberries (4-6 depending on size)
  • ½ cup blueberries
  • ½ cup raspberries
  • Zest from 2 limes
  • ½ cup sugar

Remove the stems from the strawberries and cut them into halves or quarters, depending on the size. Mix the berries, lime zest, and sugar in a bowl and set aside for at least 30 minutes. If you’re using the compote as a cake filling, drain the fruit juice well before spreading it between the layers. Top your cake with the juice and fruit if using it as a sauce.
