Eggnog Cake: Winter Inspiration for Cold Days

Snow is falling outside, there’s a warm fire glowing in the fireplace, and the smell of freshly cut balsam fir is in the air. And even though a toasty, warm drink sounds ideal on a chilly winter night, sometimes you can’t help but pour yourself a glass of eggnog instead. And for good reason! Eggnog is just as synonymous with the holidays as gingerbread and ho, ho, hos. What you need is an eggnog cake.

The warmth from the spices and the luxurious creamy consistency is Christmas in a cup. So why not enjoy that cup of Christmas in the form of cake too (because everything is better in cake)? All you need is our Cinnamon Sugar Cake, Vanilla Frosting, a little nutmeg, and as much eggnog as your holiday heart desires. (Don’t worry, there will be plenty of eggnog to enjoy on the side.) This merry cake will make any Scrooge or Grinch happy with holiday cheer.

Eggnog Cake Instructions

Prepare the Cinnamon Sugar Cake as written until Step 2. Instead of using 1 cup of water, pour in 1 cup of eggnog into the saucepan. Continue with the remainder of Step 2. Mix in ¾ tsp of ground nutmeg to the sifted flour in Step 3. Continue with the remainder of the recipe as written. As the cake cools, prepare the Vanilla Frosting as written until Step 3. Add in 2-4 tablespoons of eggnog, not the water, in Step 3. Mix in ¼ tsp ground nutmeg as well. Frost the top of one layer of cake with frosting and then place the second layer on top. Frost the top and sides of the cake as desired. This eggnog cake is sure to be a new winter favorite. Happy Holidays!
