You've finally made it ... well, almost. It's school vacation week! And guess what? Your kids are home from school and have absolutely nothing to do. Sure, they could park it in front of the TV and binge every show on Disney+, or perhaps they'll steal your phone without you knowing. We're here to tell you there's something far more exciting and engaging that both of you can enjoy. Three words: Rainbow Surprise Cake.
It's fun, it's colorful, and you can bake it from scratch without any artificial colors or sweeteners. Here's what you will need:
- 2 Damask Confetti Cake Kits
- 2 Damask Confetti Frostings
- 2 Packs of UNREAL® Milk Chocolates
- 1 Pack of India Tree's Carnival Sprinkle Mix®
- Follow the instructions provided to bake two of Damask's Confetti Cake Kits. Once the four layers are baked, lay them flat to cool. Once they are cool (about 20 minutes), flatten all cake layers by trimming off the rounded tops. A standard kitchen knife should suffice for this. Then, for 2 layers, cut a small round out of the center using a 4-inch round cutter.
- To assemble your cake: Place 1 uncut cake layer on a cake stand or serving platter; spread 1/3 cup frosting on top. Top with 1 layer with the center removed; spread 1/3 cup frosting. Top with the second layer with the center removed; spread 1/3 cup frosting on top.
- Fill your cake with candies and India Tree's Carnival sprinkles. Gently press candies to level, and top with the full cake layer. Frost the side and top of the cake with the remaining frosting.

Tip 1
Don't have a 4-inch round cutter for this rainbow surprise cake recipe? Cut out a 4-inch circle of cooking parchment paper and use it as a pattern.
